Dill Salmon

Salmon with Dill
(from AllRecipes)

1 pound salmon fillets or steaks
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon dried dill weed
2 tablespoons butter


Preheat oven to 400 degrees F (200 degrees C).

Rinse salmon, and arrange in a 9x13 inch baking dish. Sprinkle salt, pepper, onion powder, and dill over the fish. Place pieces of butter evenly over the fish.

Bake in preheated oven for 20 to 25 minutes. Salmon is done when it flakes easily with a fork.

Serves 4.

Macaroni & Cheese Casserole

First recipe because it's one of my favorites! Mom has made this many times, and people still request it for the big get-togethers and such. This will likely crash a diet, just so you know! Enjoy :-)

Mom's Macaroni & Cheese Casserole

4 C uncooked elbows
1/2 C butter
1/2 C all-purpose flour
5 C milk
4 C shredded cheddar
salt & pepper to taste



Preheat oven to 350*F. Cook pasta per package directions and drain. In a large saucepan on MED, melt butter. Blend in flour and s&p; gradually stir in milk. Cook, stirring constantly, until sauce thickens and mix begins to boil. Add cheese; stir until cheese is melted. In a 3 qt. casserole stir together pasta and cheese sauce. Bake 30 minutes or until bubbly.


Simple and yummy. Good a day later, too! Thanks Mom!!

This is just the introductory post for the place I'll be storing my recipes. :-)

You'll usually get here via my family blog, Amphitrite and Poseidon, anytime I post a menu plan. I've been trying to get all my recipes in one place! I do have a recipe book in the kitchen, which I'm filling by printing everything on my hard drive where they're ALL stored right now. In the event of a crash I still need to be able to feed the family!

Lots of my recipes have been found online, quite a few are from Mom or my MIL, and just a handful are those I've made up using a known base (like spaghetti sauce).

I'll do my best to categorize them so no one gets lost. :-)
